Carmelitas recipes don’t get any better than these oatmeal carmelitas
Forgive me.
I went a little picture crazy on the Oatmeal Carmelitas. It’s just that they are so pretty! And gooey! And so full of caramel and chocolate and oaty goodness.
Oaty goodness? That sounds kinda icky, doesn’t it?
Let’s just forget I said that.
Carmelitas recipes are among my favorite dessert bars
The thing is, bar desserts have always and will always be my favorites. They are generally easy to make, simple to transport and share, and obviously, they tend to taste just plain delicious. I mean who doesn’t love fluffernutter bars and snickerdoodle bars?
These are one of my all time favorite bar desserts, which is sort of saying a lot.
I even busted out my macro lens (which hasn’t been out to play in, um, more months than I’d like to admit) to take pictures of the prettiness. I wanted to capture the gooey caramel and the melty chocolate.
I wanted to let the pictures do the talking. Then I started typing and messed all of that up.
Oops.
Oatmeal carmelitas recipe
Oatmeal Carmelitas
Ingredients
- 2 cups all purpose flour
- 2 cups rolled oats
- 1 1/2 cups butter melted
- 2 teaspoons baking soda
- 1 jar caramel ice cream topping 10-12 ounces
- 11 ounces milk chocolate chips 1 bag
- 1/2 - 1 teaspoon sea salt
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, stir together the flour, oats, butter, and baking soda until well combined.
- Press half of the mixture into a 13x9 baking dish and bake for 10 minutes.
- Remove from the oven and top the crust with the chocolate chips. Spoon the caramel sauce over the chocolate chips. Sprinkle with the sea salt, to taste.
- Crumble the remaining crust over the mixture as evenly as possible and return to the oven for 15 minutes.
- Cool before cutting.

I’ve made these for years with sugar. This recipe is awful without sugar added.

Tried these last night. 1 1/2 cups of butter is an awful lot. Not 1 1/2 sticks? I’m regretting eating this – feel awful!!

Nope, 1 1/2 cups is correct. When you break it up by servings, it doesn’t come out to a whole lot of butter. Sorry you weren’t a fan.

I made 3 pans of these never have made them before. I followed the recipe exactly for each batch and they turned out awful. I used salted butter because it did not specify, and being that there is no sugar in the crumb mixture, the end result was a salty, crumbly mess. The caramel and the chocolate did not make up for the lack of sweetness in the crust. Did anyone else have issues with this?

I would never question you, but is sugar purposely omitted from the oat mixture?

Oh, question away. I make mistakes all the dang time. 🙂
That being said, I did purposefully omit the sugar. I just don’t think the bars need it with the sweetness of the caramel and the milk chocolate. They’re plenty sweet as they are, and a bit healthier without the sugar. Feel free to add it in (I believe most recipes call for 3/4 cup of brown sugar) if you like things extra sweet!

@Karly, Well, mine came out super messy but tasty none the less. You’re right, I didn’t add the sugar. It would have been sweetness overload!

I used to make something similar to this, but haven’t for some time now. I loved them, though. They were all chocolate-caramel-oaty gooey super-sweet deliciousness! This is one of the first things to disappear at the family get-together or church social!!
