Slow Cooker Cajun Sausage and Bean Soup

This slow cooker soup recipe is full of Cajun flavor. The andouille sausage pairs so well with the beans.

Ingredients

  • 20 ounces dried 15 bean soup mix see notes
  • 1 medium green bell pepper diced
  • 1 medium sweet onion diced
  • 6 cups chicken broth
  • 2 cups water
  • 1 pound Andouille sausage
  • 15 ounces canned diced tomatoes
  • 2 teaspoons Cajun seasoning see notes

Instructions

  • Rinse the beans and sort through to remove any debris.
  • Place rinsed beans in a slow cooker with the bell pepper, onion, chicken broth, and water.
  • Cook on high for 5 hours.
  • Slice the sausage into thin coins and cook in a large skillet over medium high heat until browned on both sides, about 5 minutes.
  • Add the sausage, tomatoes, and Cajun seasoning to the slow cooker. Stir well.
  • Cook for 1 more hour or until beans are tender you are ready to serve. Taste and add additional Cajun seasoning or salt, as needed.
  • Serve with rice or corn bread, as desired.

Notes

Bean Soup: We use a bag of 15 bean soup mix here, such as Hurst's 15 Bean Soup. Target sells a Good & Gather 16 Bean Soup that works just as well. If your soup mix comes with a seasoning packet, you can discard it or add to taste along with the Cajun seasoning.
Cajun Seasoning: We like Slap Ya Mama or Tony Chachere's cajun seasonings. Both are fairly salty, so we don't usually need to add additional salt. If your seasoning blend is not salty, you'll want to add it to taste.
