Chocolate Peanut Butter Marshmallow Brownies

Fudgy brownies topped off with marshmallow frosting and a crunchy chocolate peanut butter topping!

Ingredients

For the brownies

For the marshmallow frosting

  • 1 cup butter
  • 7 ounces marshmallow fluff
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • pinch salt

For the cereal topping

Instructions

  • Bake and cool the brownies in a 13x9 baking dish using a box mix or our homemade recipe.
  • Add the butter, marshmallow fluff, powdered sugar, vanilla, and salt to a medium mixing bowl and mix on low speed until well combined and fluffy.
  • Spread marshmallow frosting over the cooled brownies.
  • Add the chocolate chips and peanut butter to a mixing bowl and microwave in 30 second bursts until melted. Stir well.
  • Add the cereal to the melted chocolate mixture and stir to coat. 
  • Drop large spoonfuls of the cereal mixture over the frosting and gently spread the cereal mixture over the frosted brownies.
  • Cover and place in the refrigerator for 2 hours to chill.
  • Cut into 16 slices and serve.

Notes

We highly recommend using our recipe for homemade brownies, but a box mix will work as well. Just be sure to use a family size mix that's meant to be baked in a 9x13 (or make a double batch of regular brownie mix and add it all to the one pan) or your brownies will be too thin and the ratio of marshmallow and topping will be off.
The marshmallow frosting is fairly sweet. Adding a pinch of salt helps to balance it out a bit.
