Apple Bread

This apple bread bakes up in about an hour and comes absolutely loaded with tender chunks of apple and buttery pecans. The crackly cinnamon sugar topping adds the perfect contrast in texture to the soft bread.

Ingredients

For the bread:

  • 2 cups flour
  • 2 teaspoons apple pie spice
  • 1 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • ½ teaspoon salt
  • 1/2 cup white sugar
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 2 medium tart apples finely diced
  • 3 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • 1 cup chopped pecans

For topping:

  • 1 tablespoon granulated sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 350 degrees. Spray a 9x5 loaf pan with non-stick spray.
  • Whisk together the flour, apple pie spice, baking powder, baking soda, and salt in a large mixing bowl.
  • Add the sugar and eggs to a medium mixing bowl and beat with an electric mixer on medium speed for 3 minutes.
  • Add the oil, applesauce, and vanilla to the eggs and mix to combine.
  • Pour the liquid ingredients over the dry ingredients and stir well.
  • Add the diced apples to a separate bowl along with the brown sugar, cinnamon, and pecans. Toss well to combine.
  • Add the apples and pecans to the batter and stir to combine.
  • Pour the batter into the prepared loaf pan.
  • Combine the topping ingredients and sprinkle evenly over the top.
  • Bake the bread for 1 hour or until a tester comes out clean with just a few moist crumbs.
  • Cool completely before slicing and serving.

Notes

We do not peel the apples for this recipe, but you can if you prefer. We don’t really notice the texture of the peel after baking and like the little pops of color it adds to the bread.
We dice the apples very small by using the small blade in this chopper. Slice the apples into ½ inch thick slices and then place the slices one by one in the tool to quickly dice them. You can do this by hand, but be sure to chop them small, about ¼ to ½ inch cubes.
