I have a wee bit of a confession to make.
Sun-dried tomatoes and I have not always been friends. Honestly, it’s my fault completely. Those tangy little tomatoes did nothing to make me turn my nose up at them aside from look really weird.
I’m a terrible person, aren’t I?
It’s just…they’re so wrinkly. And strange. And tomatoes are usually juicy and plump and sold in the produce section.
These are basically tomato raisins and I’m sorry, but I’m not a huge raisin fan. So I shunned the humble sun-dried tomato all of my life until one day I was like, no more. I will branch out and I will try something new.
Y’all. I am straight up obsessed with sun-dried tomatoes. They pack in so. much. flavor. It really should be illegal.
I’m working with Hurst’s Beans again this year (yay!) to bring you some more recipes featuring their dried beans. Do you remember my taco chili, my drunken beans recipe, or my pressure cooker pinto beans? All made with Hurst’s dried beans and they’re so good!
One of the things I really love about Hurst’s Beans is that they come with a little seasoning packet along with the beans. You don’t have to use it, of course, but I pretty much always do. The ham seasoning that came in the pack of Great Northern Beans I used for this soup added a great smoky flavor to the soup. So tasty!
My Tuscan White Bean Soup is thick, creamy, and packed with flavor.
This soup is really thick and hearty. I added just a touch of half and half (that’s half whipping cream and half milk for my non-American readers) to get things nice and creamy.
This soup is packed with Great Northern beans, chopped baby spinach, and lots of sun-dried tomatoes. The tomatoes really do pack such a punch of flavor.
You can use the dry packed sun-dried tomatoes or the tomatoes in oil, but if you use the oil packed tomatoes, be sure to drain them well. Save the oil for another use because it’s full of flavor!
Hope you guys love this soup as much as we do! It’s really great for hungry Trick or Treaters this time of year and works well for hungry football fans too! Basically, anytime you’ve got a big group around who need something warm and hearty, this Tuscan White Bean Soup is a total winner!

Tuscan White Bean Soup
Ingredients
- 16 ounces dried Great Northern beans
- 1 onion diced
- 3 cloves garlic minced
- 7 cups chicken broth
- 1 cup half and half
- 5 ounces sun-dried tomatoes drained
- 6 ounces baby spinach roughly chopped
- 2 teaspoons smoked paprika
- 1 teaspoon red pepper flakes more to taste
- 2 teaspoons salt more to taste
- 2 teaspoons ground pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- shaved Parmesan for serving
Instructions
- Place the dry beans into a colander and rinse thoroughly with cold water. Check for any small stones or debris and discard.
- Add the beans, onion, garlic, and chicken broth to a large slow cooker. Cover and cook on high for 4 hours or until beans are tender.
- Add the half and half, sun-dried tomatoes, spinach, and seasoning to the crockpot. Stir well to combine.
- Cover and cook on low for 1 hour.
- Stir well and add additional salt or red pepper flakes to taste.
- Serve with shaved Parmesan on top, as desired.

I made the Tuscan Bean Soup and wanted to let you know that one Tablespoon of hot pepper flakes is WAY too much. My wife would not eat it and I, who like things hot, could barely do so. I should have know better. Is this a mistake in the recipe?

My family loved this soup! ย I made a few small adjustments to some proportions of the ingredients, which I won’t bore you with, but basically followed the recipe. ย I didn’t see when to add the seasoning packet in the written recipe, but your video showed you adding it with the red pepper flakes, etc., so that’s what I did. ย By the way, the ham flavored seasoning was a terrific addition to the overall flavor of the soup. ย I look forward to making this soup again. ย Thank you.

I understand that you get some kickbacks from having advertisements on your blog, however, there are so many running videos at the same time, I can’t even get to the recipe without it crashing five times! Let alone try to see your video of the recipe you’ve posted. Please is there something that can be done? I’ve left several bloggers because of it, would hate to lose your blog as well.

This looks just like something I would love, with one small change. ย Apparently I am in that often scorned, sun dried tomato hating minority. I find them overwhelmingly sweet. ย I do however, love any other form of tomatoes. ย Do you think I could just roast some plum tomatoes, dice them up and toss them in with a good result?

I think that would be just fine! You could also used canned, diced tomatoes if you drain them well and want to go the easier route. Your way sounds better though. ๐

HAHAHAHA “tomato raisins” … LOLOL. You kill me. Oh my god. Well I’m glad you’ve come around and like tomato raisins now, I love them too! Anyway though, this soup… it looks INCREDIBLE. I’m obsessed with soup lately, (the Fall brings it out of me), so this one’s next on the list for SURE because I’ve been in need of something new to try, and I LOVE white beans!!!

Can this be made in a pressure cooker? How long would you cook for?

I haven’t tried this in a pressure cooker myself. I’d probably add everything up to the chicken broth and cook on high pressure for 40 minutes. Natural release and then add in the rest of the ingredients, aside from the half and half, for another minute on high pressure. Stir in the half and half just before serving. I haven’t actually tested this, though. No guarantees. ๐

I made this today for dinner. I did everything as written but I’m glad I checked on it early. I put it in at 2:30 and came back to stir it at 5:30 and it was completely done. I had to turn it off and throw in all the other ingredients and let it sit for a while. Beans were really mushy but this tasted amazing. Maybe I just have a strong crock pot. But I will definitely make this again and soon!
