This sloppy joe cornbread casserole combines two of my favorite things – sweet and tangy meat with an easy cornbread casserole recipe! My whole family devours this anytime I make it, which is pretty often since it’s so stinkin’ easy!

We’re pretty big on eating at the dining room table and when we were looking at houses to buy I was completely shocked at the number of houses that didn’t even have dining rooms or a space to put a table in the kitchen.
Where do people eat? On the couch?? I mean, that sounds lovely and all, but what about the kids?
Can you imagine handing a kid a sloppy joe and sending him off to your carpeted living room? I die just thinking about that.
No, we eat at the table in our house, partially because I think it’s just easier, partially because there is no carpeting anywhere in sight, and partially because I’m a mean mom.

Well, I’m the (self-proclaimed) casserole queen, so when I noticed my children all huddled under blankets trying to stay warm this week I decided to bust out a nice, comforting casserole. Cozy and warm, here we come!
I used the cornbread base from my chicken tamale casserole and doctored it up a bit with some sloppy joe sauce making a super tangy, sweet, kid friendly family favorite! Serve this with a side salad and some steamed broccoli and you have a pretty easy meal.

One note, this sloppy joe cornbread casserole recipe uses the larger can of sloppy joe sauce. You DO NOT have to use all of it here. If you do, things will be extra saucy (not a bad thing!). Use your best judgement when it comes to pouring the sauce into the meat and add as much as you personally like on your sandwiches. If you like them saucy, dump it all in. If you like them dryer, leave some out. You really can’t mess this recipe up!
Sloppy Joe Cornbread Casserole
Ingredients
- 8.5 ounces corn muffin mix (Jiffy works great) 1 box
- 1 cup shredded cheddar divided
- 1/3 cup milk
- 1 large egg
- 14.75 ounces cream-style corn 1 can
- 24 ounce can sloppy joe sauce or homemade, divided
- 1 pound ground beef
- 1 tablespoon butter
- 1/2 sweet onion
- 1 bell pepper any color
- 1/4 cup diced green onions
Instructions
- Heat the oven to 400 degrees. Spray a 9x13 baking dish with non-stick cooking spray.
- In a medium sized bowl, add the cornbread mix, 1/2 cup of cheddar cheese, milk, egg, and canned corn. Stir until well combined.
- Pour into the prepared baking dish and bake for 15 minutes or until just set.
- Dice the onion and pepper and add to a large skillet with the butter. Cook until softened.
- Add the ground beef to the skillet and cook through. Drain the fat.
- Add all but 1/2 cup of the sloppy joe sauce to the pan with the meat to warm.
- Remove the cornbread from the oven and use a fork to prick holes over the cornbread. Pour the remaining 1/2 cup of the sloppy joe sauce over the cornbread.
- Spoon the meat and sauce over the baked cornbread and top with the remaining cheese. Return to the oven for 15 minutes.
- Top with the green onions before serving.

Made it for lunch for the kids I work with and it was a smashing success. They especially loved helping me make it.
The only thing though is that instead of 2 can of sloppy Joes sauce I used 1 and 1 can of chili with out beans and added sour cream once was served. Yum. Thanks for this.

Can you substitute drained whole kernal corn for the cream corn my family doesn’t like the cream corn

I think that would work fine. The creamed corn adds moisture to the conrbread and doesn’t end up tasting like creamed corn though.

If you need to double the recipe how long would you need to bake it for cause 15 min was not long enough at all but i wasnt sure if i should just double the time to 30 min like i just doubled everything else .. sorry cooking is a new thing for me so i am alittle slow in the game

I’m not sure how long you’d need to bake it. The bottom portion shouldn’t be fully baked when you add the meat sauce to the top. It’ll all finish baking together.

wish I knew how to convert your recipes so I could use them while I am on Weight Watchers. I would love to have a “healthified” version of this and all your recipes.

Weight Watchers is mostly just low fat and low calories, so you could swap in ground chicken for the beef, reduce the cheese and use a low fat cheese. ๐ Wouldn’t be too hard to convert.

This looks good but I don’t use canned ingredients. ย Want to make it with a homemade sloppy joe sauce, but cannot find a recipe for same. ย All the sloppy joe recipes do not call for anywhere near the 24 oz needed for the recipe. ย If I just triple or quadruple the wet ingredients that are in existing sloppy joe recipes, it doesn’t seem like I will get a good result. ย Any suggestions?

I would just double a homemade sauce recipe. The 24 ounce can is for 2 pounds of meat and most homemade sauces coat 1 pound of meat. Doubling it should be plenty.

I’ve made this a couple of times for potluck sand it is always a hit. I’ve also tried a “taco version” with taco seasoning and salsa instead of sloppy joe sauce and it is great too.

Nobody at the table liked this recipe. The combination of the sugars in the canned sloppy joe mixture, creamed corn and Jiffy cornbread mix did not make a good casserole. It was way too sweet and not that good. Would not make this again.

Looks delish! We eat at the kitchen table. Never had a dining room when I was growing up. The kitchen was our only choice, and it seems cozy to me. The dining room seems formal, and we only use it for company.
