These red velvet cookies start with a cake mix, making them super quick and easy to prepare! The soft dough makes for a delicious cookie!
My husband, the cookie connoisseur, has been requesting things like plain old chocolate chip cookies and peanut butter oatmeal chocolate chip cookies. Now, it’s not that I have a problem with those cookies – they’re classics for a reason! It’s just…I like to experiment and have fun in the cookie department!
You know gooey butter cake? It’s a midwestern thing, so if you’ve never heard of it, that’s likely why.
It’s a cake that’s so full of sugary sweet gooey goodness and I knew it would work well in cookie form.
I was so right! These red velvet cake mix cookies are exactly the ooey gooey butter cookies I was dreaming of!
I’ve also made gooey butter chocolate chip cookies and those are just as insanely good! You can’t go wrong when you start with a cake mix.
How to make red velvet cookies with cake mix:
Grab your favorite brand of red velvet cake mix, some butter, cream cheese, an egg, and vanilla. We add white chocolate chips to make these extra yummy and pretty.
That’s all you’ll need for these cake mix cookies!
Mix everything but the chocolate chips together using a stand or hand mixer until the batter is smooth and creamy.
Stir in the chocolate chips by hand.
Grab a cookie scoop and drop these onto a parchment lined baking sheet.
We like to sprinkle a few extra chocolate chips on top of the balls of dough. It makes for extra pretty cookies!
Pop them in the oven and that’s it! So quick and easy!

Red Velvet Gooey Butter Cookies
Ingredients
- 1 box Red Velvet cake mix
- 8 ounces cream cheese
- 1/2 cup butter room temperature
- 1 large egg
- 1 teaspoon vanilla
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Beat together the cream cheese and butter until well combined. Beat in the egg and vanilla. Add the cake mix and beat until well combined. Stir in the chocolate chips.
- Roll tablespoonfuls of dough into balls and place on a parchment lined baking sheet.
- Bake for 10 - 12 minutes or until the top is set, but the center is still gooey.
- Cool on a wire rack.

I am so excited to make this recipe the cookies look so moist and decadent . The recipe says to add in the cake mix , does that mean to add it straight out the bag or make it into a batter and then add ?

Really wasn’t impressed with this recipe. It seemed they were having an identity crisis, cookie or cake? They were dry and spongey. The batter was rather difficult to work with too.

Sorry you had troubles with this one. It’s hard to say what went wrong. Did you follow the recipe exactly? These should be somewhat dense and slightly gooey, so I’m not sure why they would be spongy.
