These red velvet cookies start with a cake mix, making them super quick and easy to prepare! The soft dough makes for a delicious cookie!
My husband, the cookie connoisseur, has been requesting things like plain old chocolate chip cookies and peanut butter oatmeal chocolate chip cookies. Now, it’s not that I have a problem with those cookies – they’re classics for a reason! It’s just…I like to experiment and have fun in the cookie department!
You know gooey butter cake? It’s a midwestern thing, so if you’ve never heard of it, that’s likely why.
It’s a cake that’s so full of sugary sweet gooey goodness and I knew it would work well in cookie form.
I was so right! These red velvet cake mix cookies are exactly the ooey gooey butter cookies I was dreaming of!
I’ve also made gooey butter chocolate chip cookies and those are just as insanely good! You can’t go wrong when you start with a cake mix.
How to make red velvet cookies with cake mix:
Grab your favorite brand of red velvet cake mix, some butter, cream cheese, an egg, and vanilla. We add white chocolate chips to make these extra yummy and pretty.
That’s all you’ll need for these cake mix cookies!
Mix everything but the chocolate chips together using a stand or hand mixer until the batter is smooth and creamy.
Stir in the chocolate chips by hand.
Grab a cookie scoop and drop these onto a parchment lined baking sheet.
We like to sprinkle a few extra chocolate chips on top of the balls of dough. It makes for extra pretty cookies!
Pop them in the oven and that’s it! So quick and easy!

Red Velvet Gooey Butter Cookies
Ingredients
- 1 box Red Velvet cake mix
- 8 ounces cream cheese
- 1/2 cup butter room temperature
- 1 large egg
- 1 teaspoon vanilla
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Beat together the cream cheese and butter until well combined. Beat in the egg and vanilla. Add the cake mix and beat until well combined. Stir in the chocolate chips.
- Roll tablespoonfuls of dough into balls and place on a parchment lined baking sheet.
- Bake for 10 - 12 minutes or until the top is set, but the center is still gooey.
- Cool on a wire rack.

The cake mix I use is 18.25 ounces. It’s enough for a 2 layer cake.

These were stored at room temperature for about a week for me and were still great! I had another reader ship the chocolate chip version of these cookies (very similar recipe) and they shipped and held up great!

I don’t bring it to room temperature, but I use a stand mixer when making these. If you’re not, you might want to bring it down to room temp. ๐
