These red velvet cookies start with a cake mix, making them super quick and easy to prepare! The soft dough makes for a delicious cookie!
My husband, the cookie connoisseur, has been requesting things like plain old chocolate chip cookies and peanut butter oatmeal chocolate chip cookies. Now, it’s not that I have a problem with those cookies – they’re classics for a reason! It’s just…I like to experiment and have fun in the cookie department!
You know gooey butter cake? It’s a midwestern thing, so if you’ve never heard of it, that’s likely why.
It’s a cake that’s so full of sugary sweet gooey goodness and I knew it would work well in cookie form.
I was so right! These red velvet cake mix cookies are exactly the ooey gooey butter cookies I was dreaming of!
I’ve also made gooey butter chocolate chip cookies and those are just as insanely good! You can’t go wrong when you start with a cake mix.
How to make red velvet cookies with cake mix:
Grab your favorite brand of red velvet cake mix, some butter, cream cheese, an egg, and vanilla. We add white chocolate chips to make these extra yummy and pretty.
That’s all you’ll need for these cake mix cookies!
Mix everything but the chocolate chips together using a stand or hand mixer until the batter is smooth and creamy.
Stir in the chocolate chips by hand.
Grab a cookie scoop and drop these onto a parchment lined baking sheet.
We like to sprinkle a few extra chocolate chips on top of the balls of dough. It makes for extra pretty cookies!
Pop them in the oven and that’s it! So quick and easy!

Red Velvet Gooey Butter Cookies
Ingredients
- 1 box Red Velvet cake mix
- 8 ounces cream cheese
- 1/2 cup butter room temperature
- 1 large egg
- 1 teaspoon vanilla
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Beat together the cream cheese and butter until well combined. Beat in the egg and vanilla. Add the cake mix and beat until well combined. Stir in the chocolate chips.
- Roll tablespoonfuls of dough into balls and place on a parchment lined baking sheet.
- Bake for 10 - 12 minutes or until the top is set, but the center is still gooey.
- Cool on a wire rack.

My daughter was allergic to chocolate as a child and even though she grew out of the allergy she doesn’t like the taste of chocolate????. Though she LOVES white chocolate and red velvet ????. Probably not. This recipe uses the dry mix, not an actual cake.

Absolutely! You might even chill the dough for a couple of hours before baking. That will help them not spread as much so you’ll have a nice little poof of a cookie to stick your kiss in. ๐

Can I substitute something besides the cream cheese? Can you taste the cream cheese?

These a riff on the standard gooey butter cake which is full of cream cheese. You can definitely taste it in these.
There are lots of other cake mix cookie recipes out there if you don’t like cream cheese, but I don’t think substituting it in this would work out well. ๐

Ok, let me preface this by saying I’ve got a Zucchini Triple Chip Spice cake on my side board made with a box of spice cake mix (I love the Cake Mix Doctorยฎ!) so I’m not trash talking the red velvet cake mix in any way shape form . . . but . . .
I wonder if I could make my own red velvet using shredded beets in the mixture? I’ve got a beet crust pizza coming out on Friday, and the crust color is so phenomenal it makes me wonder if I could do it in a cookie form as well.
Either way, the cookies look absolutely delicious and would make an excellent Valentine’s dessert (after some fresh mozzarella on beet crust pizza, perhaps?). Thanks!
