Chocolate + Peanut Butter + Pretzels = Happiness
Look, I don’t make the rules, but math is math. Chocolate + peanut butter + pretzels = happiness. I stand by that calculation.
These peanut butter pretzel bites are simple enough to make with just a handful of ingredients but the end result is a bit…well…addicting.
You think you’ll be able to eat just one of these little chocolate dipped pretzel sandwiches, but I’m telling you: That’s not possible. It’s like the law of gravity, what goes up absolutely positively must come down. Or that rule about how you can’t fold one piece of paper in half more than 7 times no matter how hard you try. It’s as impossible as a human flapping his arms and flying. It’s like a Lay’s potato chip…you can’t eat just one.
We’re making peanut butter balls out of creamy peanut butter, brown sugar, and powdered sugar and then smooshing those balls between two crispy, salty pretzels, and then we dunk all of that into melty chocolate. Someone save me.
♥ What We Love About This Recipe:
- Easy: No baking required with this recipe! You will need to melt some chocolate but that’s all the heating that’s necessary. These are quick and easy snacks that you can prepare in no time at all.
- Make Ahead: These are great to keep on hand for guests or for those midnight snacking urges. You can store them in your fridge for a couple of weeks, no problem.
- Sweet & Salty: We love the sweet and creamy combination of chocolate and peanut butter but it’s even better with the salty, crispy pretzels! There is just the right balance of sweet and salty goodness in these treats.
Ingredient Notes:
Pretzels – We’re using the small square or waffle shaped pretzels to make this recipe. They are perfect for making these peanut butter pretzel sandwiches. Regular pretzels work just fine too.
Peanut Butter – We go for Jif or Skippy with this recipe. Natural peanut butter that needs to be stirred together isn’t the best option for a recipe like this as it’s a bit oily.
Sugar – You’ll also need some brown sugar and some powdered sugar for making the sweet peanut butter filling.
Chocolate Chips – We’re melting semi-sweet chocolate chips and dipping half the pretzel bites into them. You could use milk chocolate or even dark chocolate chips too.
How To Make Peanut Butter Pretzel Bites:
Add the peanut butter, butter, brown sugar, powdered sugar, and salt to a mixing bowl and beat with an electric mixer until smooth. Roll into small balls.
Line a sheet pan with parchment paper and arrange half the pretzels in an even layer. Place a peanut butter ball on each pretzel and then top them off with the remaining pretzels and freeze.
Melt the chocolate chips in the microwave or in a double broiler. Be careful not to burn the chocolate!
Dip one half of each of the pretzel bites in the chocolate and then pop them back on the baking sheet to set up.
Storage Instructions:
You can keep these peanut butter pretzel bites stored in an airtight container at room temperature for about a week or in the fridge for 2-3 weeks.
Recipe FAQs:
We’re using the waffle like pretzels here because they are perfect for making mini peanut butter pretzel sandwiches. Regular shaped pretzels will also work just fine.
Unless you are using gluten free pretzels this recipe will contain gluten.
Peanut Butter Pretzel Bites
Ingredients
- 1 cup creamy peanut butter
- 2 tablespoons softened butter
- 1 1/4 cups powdered sugar more as needed
- ½ cup brown sugar
- ½ teaspoon kosher salt
- 60 pretzels
- 1 cup semi-sweet chocolate chips
- 1 teaspoon coconut oil
Instructions
- Combine the peanut butter, butter, powdered sugar, brown sugar, and salt in a mixer. Beat until well combined.
- Add more powdered sugar as needed to get the mixture to a consistency where you can easily roll it without it sticking to your hands. If the mixture gets too sweet, add an extra pinch of salt to cut the sweetness. You can also refrigerate this for 10 minutes to help it thicken up and not be quite so sticky.
- Arrange 30 pretzels on a wax paper or parchment lined baking sheet.
- Use a small cookie scoop (1 tablespoon size) to scoop out 30 scoops of peanut butter and roll into a ball. Place the balls on the pretzels and then top each one with an additional pretzel to make a sandwich.
- Place in the freezer for 30 minutes.
- Melt the chocolate and coconut oil in a double boiler or carefully in a microwave safe bowl. Dip one half of each sandwich into the chocolate mixture to coat and then return to the lined baking sheet. Repeat with all the sandwiches and then place them back in the freezer until the chocolate has hardened back up, about 20 minutes.
- Transfer to an airtight container or ziptop bag and store in the fridge.
