Okay, friends, I have a good one for you today!
You know how sometimes you just really need a big, fat, juicy bacon cheeseburger? Happens to me daily, if we’re being honest.
I’m back on the low carb bandwagon again and one of those burger cravings hit. Of course, my bacon cheeseburger salad is always nice, but I’m getting a little sick of salad and wanted something filling and loaded with protein.
Enter this keto cheeseburger casserole. Oh, did I mention the bacon? Because obviously we added bacon.
This is now one of my new favorite low carb ground beef recipes. So filling, pretty simple to throw together, and a definite crowd pleaser.
This hamburger casserole recipe has been such a hit that I created this keto taco casserole too. Always love a Mexican spin on food!
I’ve also made a buffalo chicken casserole based off of this recipe! It’s just a winning combo.
Low Carb Cheeseburger Casserole Ingredients:

Beef – We’re using lean beef, but you can buy a fattier beef and just drain the excess grease.
Bacon – Dice it and fry it up.
Sauce – This low carb bacon cheeseburger casserole gets a creamy sauce made from cream cheese, reduced or no sugar added ketchup, mustard, Worcestershire sauce, and seasoned salt.
Egg – Seems weird in a cheeseburger casserole, but the egg holds everything together and adds extra protein and helps keep you full. This low carb casserole could also be considered a quiche, if you want to get technical.
Cheese – We sprinkle plenty of shredded cheddar over the top.

Does this keto hamburger casserole taste like eggs?
I’ve actually had a lot of people ask if this tasted egg-y and I really don’t think it does at all. There are just 4 eggs in the whole casserole, so that’s less than one egg per serving.
The eggs really just serve to hold everything together.
Serving Suggestions:
Give this a try with some diced red onion and pickles on top! Just note that any additional toppings you add will impact the carb count of this recipe.
This goes great with a side of cauliflower rice or a nice green salad topped with your favorite dressing. We like this homemade keto ranch dressing.
Is ketchup keto friendly?
Most ketchup is loaded with sugar, so you’ll want to be sure to read the labels. We use Heinz No Sugar Added Ketchup. It’s low in carbs and uses sucralose as the sweetener.
My kids actually prefer it to regular ketchup!

Low Carb Bacon Cheeseburger Casserole
Ingredients
- 1/2 pound bacon
- 1 pound ground beef
- 1/2 onion diced
- 1 clove garlic minced
- 4 tablespoons cream cheese
- 2 tablespoons no sugar added ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon seasoned salt
- 4 large eggs
- 1/4 cup heavy cream
- 1 teaspoon hot sauce
- 1 teaspoon ground pepper
- 8 ounces shredded cheddar
- 1 teaspoon fresh dill
Instructions
- Dice the bacon into small pieces and place in a large skillet over medium heat. Cook, stirring often, until crisp. Remove bacon from pan and set aside on a paper towel lined plate. Drain grease from pan.
- Add the ground beef, onion, and garlic to the skillet and cook until browned, crumbling as it cooks. Once beef is browned and cooked through, drain fat.
- Add the cream cheese, ketchup, mustard, Worcestershire sauce, and seasoned salt to the skillet and cook over low heat, stirring constantly, until combined.
- Spread the beef mixture into a greased 8×8 baking dish. Top with the cooked bacon.
- Crack the eggs into a medium bowl and whisk together with the heavy cream, hot sauce, and pepper.
- Pour the egg mixture over the beef and bacon.
- Top with the cheddar cheese.
- Bake at 350 degrees for 30-35 minutes or until set and golden on top. Let cool 15 minutes before sprinkling with dill and serving.

Made this last night and it was great. I have a large family so doubled the meat but made some alterations to the recipe as I do a lower fat keto. Doubled the ground beef, kept the cheese at the original amount, doubled the eggs and cream, kept the bacon the same and added saluted mushrooms. Still plenty rich and all the family loved it.

with keto you don’t want lower fat. keto requires high fat to work.

not true at all. In order to be in ketosis you only need to keep your carbs low… fat just helps you become fat adapted/in ketosis – once there you can cut back on the fat and watch your body burn up your fat and get skinny!

Actually it is in fact true. ย Keto is high fat, low carbs, zero sugar. ย High fat meaning… HIGH FAT! ย Maybe you are confusing Keto with Atkins. ย ย

Fat isn’t a goal, tho. Fat is high in keto so you stay full. You don’t NEED to eat as much as your macros suggest.

Made this tonight and it’s a keeper! Only changes that I made is I added 3 cloves of garlic instead of 1 and used dried dill weed as I didn’t have fresh. I used a 7″ X 11″ pan as the 8″ X 8″ seemed too small. It worked out perfectly. This is 5 stars! I will be making this regularly!

Holy Crap! That has enough sodium in one slice to kill a frigging horse! Actually, that’s 1/2 of the daily recommendation, but still, super super bad for the arteries! Love the low carb aspect though. I am going to make and try substitutes…lower sodium bacon, cut out the teaspoon of salt, low sodium Worceshtershire, and that right there will probably bring the sodium down from 1075mg to 500mg. Much healthier for us heart patients! Looks yummy!

As a person who constantly is hypokalemic and has issues with cramping sodium is a moot point. Those who follow a true keto lifestyle donโt concern themselves with โtoo much sodiumโ and โclogging arteriesโ. I think you may need to a little research.ย

I have to eat 6-10 grams of salt a day for my health. So yeah salt is not bad for you. Nor is fat. Sugar is the culprit ๐

People in full blown ketosis must drink so much water that they are mineral depleted. I welcome mineral rich, unrefined himylayen salt and electolite suplements or else i risk serious cramps and even atrial fibrulation. Oh yeah. You might notice this recipe was billed as low carb, not low sodium. One recipe can’t be all things to all people, woman. So you adjust it to suit your own needs and preferences. No need to blast the blogger!

Apparently once our bodies go into ketosis, it flushed out a lot of water and salt. I just canโt believe I can eat this and lose Weight at 589 calories! ย Their is no portion size listed??? Also, arenโt we supposed to watch protein intake as well?ย

This was great!!! I didn’t have dill so I added pickle relish to the beef mixture. I added a dollop of thousand island on my serving and my husband at the rest!! No leftovers for us! Wonderful addition to our lo carb recipes, thank you so much!

I read through the comments looking for suggestions on it being freezer friendly -did see where someone cooked it and divided into single serving for later. My question is would it freeze well once assembled after cooking the hamburger mixture, allowing it to cool down well enough to sprinkle the cheese on top and then defrost over night in the frig and then cook? Hope I made sense – needing recipes that would freeze well for a week or so. Thanks!

I froze this without having the egg mixture on it and it did fine. I let everything cool then wrapped plastic wrap over it and topped with foil marking date, name of meal and how to cook it.

I know this is a little late- but it freezes beautifully. I just fully cook it, freeze, let it thaw in the fridge and reheat by microwaving!

Except when I enter everything into my carb manager app it’s stating a much much higher macro for everything.. but most of all carbs are saying 9 grams of carbs .. not 2. That’s a bug difference.

Hmm, not sure why there would be such a difference. I used My Fitness Pal to calculate the nutrition and things will definitely vary based on the brands/products you put in.

Me either it was so odd … I entered the recipe verbatim in both apps carb manager and my fitness pal and both have much higher carbs than 2grams.. Just wanted to warn people to enter it and check everything before consuming because it could really mess up a person’s day or even week. Or worse kick them out of ketosis. Still one of the best keto dishes I have ever made lol just gotta be careful not to over eat. Lol

This is my FAVORITE Keto recipe, hands down! I have made it several times and tonight I’m going to try adding mushrooms – hope I don’t regret messing with perfection! Do you by chance have a breakdown of how you got it to 2 net carbs? When I enter the recipe into Cronometer, I get 5.1 net carbs and 668 calories per serving. Do you count the carbs from the eggs, ground pepper, cream, garlic etc? I’ve been using the USDA nutrition facts for my basic common ingredients.

I used My Fitness Pal to calculate the nutrition and plugged the entire recipe into their calculator. I’m not a dietitian and the nutrition info I supply is just as a courtesy and should only be used as an estimate.

Excellent recipe. Would be great, too as a breakfast casserole substituting ground sausage for the ground beef. Served with a dollop of sour cream and some salsa makes it really yummy. Only change made was used half tsp, of table salt due to not having seasoned salt and used some “Slap Ya Momma” hot seasoning in place of the hot sauce.
