Okay, friends, I have a good one for you today!
You know how sometimes you just really need a big, fat, juicy bacon cheeseburger? Happens to me daily, if we’re being honest.
I’m back on the low carb bandwagon again and one of those burger cravings hit. Of course, my bacon cheeseburger salad is always nice, but I’m getting a little sick of salad and wanted something filling and loaded with protein.
Enter this keto cheeseburger casserole. Oh, did I mention the bacon? Because obviously we added bacon.
This is now one of my new favorite low carb ground beef recipes. So filling, pretty simple to throw together, and a definite crowd pleaser.
This hamburger casserole recipe has been such a hit that I created this keto taco casserole too. Always love a Mexican spin on food!
I’ve also made a buffalo chicken casserole based off of this recipe! It’s just a winning combo.
Low Carb Cheeseburger Casserole Ingredients:

Beef – We’re using lean beef, but you can buy a fattier beef and just drain the excess grease.
Bacon – Dice it and fry it up.
Sauce – This low carb bacon cheeseburger casserole gets a creamy sauce made from cream cheese, reduced or no sugar added ketchup, mustard, Worcestershire sauce, and seasoned salt.
Egg – Seems weird in a cheeseburger casserole, but the egg holds everything together and adds extra protein and helps keep you full. This low carb casserole could also be considered a quiche, if you want to get technical.
Cheese – We sprinkle plenty of shredded cheddar over the top.

Does this keto hamburger casserole taste like eggs?
I’ve actually had a lot of people ask if this tasted egg-y and I really don’t think it does at all. There are just 4 eggs in the whole casserole, so that’s less than one egg per serving.
The eggs really just serve to hold everything together.
Serving Suggestions:
Give this a try with some diced red onion and pickles on top! Just note that any additional toppings you add will impact the carb count of this recipe.
This goes great with a side of cauliflower rice or a nice green salad topped with your favorite dressing. We like this homemade keto ranch dressing.
Is ketchup keto friendly?
Most ketchup is loaded with sugar, so you’ll want to be sure to read the labels. We use Heinz No Sugar Added Ketchup. It’s low in carbs and uses sucralose as the sweetener.
My kids actually prefer it to regular ketchup!

Low Carb Bacon Cheeseburger Casserole
Ingredients
- 1/2 pound bacon
- 1 pound ground beef
- 1/2 onion diced
- 1 clove garlic minced
- 4 tablespoons cream cheese
- 2 tablespoons no sugar added ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon seasoned salt
- 4 large eggs
- 1/4 cup heavy cream
- 1 teaspoon hot sauce
- 1 teaspoon ground pepper
- 8 ounces shredded cheddar
- 1 teaspoon fresh dill
Instructions
- Dice the bacon into small pieces and place in a large skillet over medium heat. Cook, stirring often, until crisp. Remove bacon from pan and set aside on a paper towel lined plate. Drain grease from pan.
- Add the ground beef, onion, and garlic to the skillet and cook until browned, crumbling as it cooks. Once beef is browned and cooked through, drain fat.
- Add the cream cheese, ketchup, mustard, Worcestershire sauce, and seasoned salt to the skillet and cook over low heat, stirring constantly, until combined.
- Spread the beef mixture into a greased 8×8 baking dish. Top with the cooked bacon.
- Crack the eggs into a medium bowl and whisk together with the heavy cream, hot sauce, and pepper.
- Pour the egg mixture over the beef and bacon.
- Top with the cheddar cheese.
- Bake at 350 degrees for 30-35 minutes or until set and golden on top. Let cool 15 minutes before sprinkling with dill and serving.

I must be missing something here. This recipe sounded wonderful, especially since most if not all of the ingredients are in our frig or pantry. I followed the directions EXACTLY. Only substitution was Mrs. Dashes Herb Onion flavor for the seasoned salt. I was out. Smelled amazing while it was cooking and my husband and I couldn’t wait to dig in.
As soon as I was spooning it on our plates I could tell it was DRY…really DRY. No one else had this problem?? I will make this again because the flavors are great but will probably double or more the cream cheese and maybe an additional egg with more cream.

Hi Susan! It sounds like it was overbaked if it was dry. You just want to get the eggs set, much like a quiche. 🙂

Okay, I’m totally frustrated. Where is the recipe for the Cheeseburger Casserole? I see the recipe for the bacon hamburger casserole and that is IT! I have been through this posting six or seven times and can’t find a recipe for the chicken or the cheeseburger casserole. I do not eat pork so I do not want the beef/bacon recipe. Really lousy. Talk about and show pictures of a recipe and not give the reader a way to get the recipe.

I don’t have a plain cheeseburger casserole recipe, but you could always leave the bacon out of this one. There are links under the photos to the taco and chicken casserole.

I know this is an older recipe, but I just had to comment.
I’ve made this one a few times now, and my husband and I just ADORE it.
I haven’t frozen it yet, because we tend to eat it until it’s absolutely GONE. No wasted leftovers with this recipe! Also, as much as I love to cook, I have some mental health issues and some days I just **can’t.** So any dish that we can have for dinner a few times from one recipe is a keeper! This one has saved me several times.
One of my favorite things about it is that it’s one of those recipes that tastes even better the next day!
It’s versatile, you can add veggies or use ground turkey or half sausage half beef, whatever you like. We tend to like it best with either a side salad or buttered and salted cauliflower… that way we don’t distract from the flavors of the dish.

Made a double batch of this, minus the bacon and only 1/2 cup cream and 1cup of cheddar in a 9×9 dish and it turned out amazing. Was easy to prepare and will definitely become a staple in our diet….

Really good!! I also used skim milk (because that’s what we had) and I don’t think it hurt anything. I drained some dill relish and spread that on top after I took it out if the oven. It added a nice tang and definitely tasted like a cheeseburger. Kids even liked it so I’ll definitely make this again!

This was amazing! I was trying to make a dinner that would make us all happy—including the low carb dieter in our home. This definitely hit the mark. I left out the hot sauce(kids nor I like spicy foods), the onions—to save carbs & I HATE any onion, the fresh dill on top, & I used half the egg mixture since I’m not crazy about quiche/eggy dishes. I added dill pickle slices between the beef/bacon layer & the cheese topper, added a nice crunch & zip. Also, as another post stated, I used the Badia—bc its awesome. Overall, it was a bit too salty—I’ll have to use individual seasonings next time (and there will be a next time) to cut back the salty. I didn’t think I changed much to tailor the recipe to our tastes/likes…but I guess I did. Wonderful dish!!

WOW!! I low carb diet off and on. Just got on it again after a bad 2 years of life. Gained 65lbs. Already lost 15! I have been low carbing throughout the years since 2002.

Incredible! I’m vegetarian, but my friend makes this recipe all the time and her boys devour it.l, so after a visit to her house one night & seeing it for myself, I decided I had to make it! I omitted the bacon, and substituted the beef for Beyond Meat soy-free grounds, and added some squeezy-tube dill mixed into the eggs & cream in lieu of fresh dill on top (bc I didn’t have any) and it is simply INCREDIBLE! I’ve already bookmarked your taco version to try next!
