These Grinch Cookies start with a box of cake mix and a tub of Cool Whip! The kids love these and they are easy so simple to make with just a few ingredients!

We’re Putting Cool Whip In The Cookies, Y’all.

These are a riff on our Pumpkin Cool Whip Cookies…we love those so much we couldn’t keep them as a Fall only treat. They had to transform into something Christmas-y.
If you like making festive little treats that aren’t too fussy or difficult, these Grinch Cookies are exactly the kind of recipe you’re going to love. So cute on cookie trays too!
Ingredients & Substitutions:
White Cake Mix – You can use any brand of boxed white cake mix that you prefer for preparing these Cool Whip cake mix cookies. Yellow cake mix also works, but it’s harder to get the shade of green just right.
Cool Whip – It gives the cookies a light, airy texture and they’re fluffy and chewy too thanks to the cake mix. These cookies are so easy!
Decoration – For the holiday Grinch decoration I’m using some neon green gel food coloring and red heart sprinkles. Feel free to get more creative with the decorations!
Other – You’ll also need an egg and some powdered sugar!

We use cookie scoops for everything from baking cookies to scooping meatballs to easily filling muffin tins.
Step by Step Instructions:
Add all ingredients except powdered sugar to a large mixing bowl and mix until just combined with a rubber spatula.
Add extra green food coloring to get it just the shade you want.
Drop balls of cookie dough directly into a bowl of powdered sugar and roll them around to coat. Bake on a prepared baking sheet at 350 degrees for 12 to 13 minutes or until the edges are firm and the tops look set.
Place a heart sprinkle on each cookie immediately after removing from the oven and press down so it adheres. Allow the cookies to cool completely before serving!
Helpful Tip!
Storage & Freezing:
Cake mix Cool Whip cookies can be stored at room temperature for about 3 to 4 days in a covered container.
You can also freeze the cookies. Freeze them on a baking sheet for an hour before transferring to a freezer safe container or bag. They should last up to a few months.
Serving Suggestions:
Although these cookies are great all on their own you might as well serve them up with something hot to drink that’s also festive! Try them with some white hot chocolate or our peppermint mocha!
Some spiked eggnog might help you get through the holiday season too if you’re feeling like the Grinch.

Grinch Cookies
Ingredients
- 15.25 ounces white cake mix
- 8 ounces Cool Whip thawed
- 1 large egg
- 1 teaspoon neon green gel food coloring more as needed
- ½ cup powdered sugar
- Red heart sprinkles
Instructions
- Preheat oven to 350°F. Line a sheet pan with parchment paper.
- Add your cake mix, cool whip, egg, and food coloring to a large mixing bowl. Mix the ingredients just until combined using a rubber spatula.
- Use a medium sized cookie scoop and scoop balls of cookie dough directly into a bowl of powdered sugar. The dough will be sticky. Roll the dough around to coat in the powdered sugar.
- Place the cookies on the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake for 12-13 minutes until the edges are firm and cookies look set on top
- Remove from the oven and immediately place a heart sprinkle on each cookie, lightly pressing it down so it adheres to the cookie.
- Allow the cookies to cool on the sheet pan before serving.
