So, the other day I went out to dinner with my husband. He always makes me order first so that he appears all gentlemanly to the wait staff, but dude. When we’re home alone he calls me names and pinches my butt.
He’s only a gentleman in public.
It’s all an act. And I just thought the world should know.
So, anyway, there we are, ordering our dinner. I go for broke in the calorie department (as per usual) and order buffalo chicken strips and extra crispy french fries with ranch dressing to dip it all in.
I’m such a dainty eater. Obvi.
So, then my husband orders. “I’ll have a salad, please.”
Oh, please. A salad? If I served a salad for dinner there would be a serious hissy fit happening at the table from one un-gentleman-like grown man. But, sure, go ahead and order a salad while we’re out for dinner and I order man food. That’s perfectly fine. I don’t mind at all.
See? I told you the gentleman thing was all an act.
I love him anyway, though, so I made cookies. They’re gluten-free, too, if you’re into that kind of thing.
And, if you want to see what the salad eating man in my life looks like, we had some family photos taken last month. I think they’re gorgeous. You can see them right here if you’d like.

Gluten-free fad diets have recently become popular. A 2012 study concluded “There is no evidence to suggest that following a gluten-free diet has any significant benefits in the general population. Indeed, there is some evidence to suggest that a gluten-free diet may adversely affect gut health in those without celiac disease or gluten sensitivity.*

Remember the tagline “I can’t believe it’s not butter?” Well this one is i can’t believe there is no flour! but it works so well. Sure the taste is a bit different, but i like it – great alternative, thanks

I just made these cookies and fell in love. So delicious! Thank you! I’m gluten-intolerant and I miss my cookie goodness. These are winners! However, I have a question: how did you get yours to beautiful and round? Mine came out very flat, though no less delicious. What should I do?
Again, thank you for posting a gluten-free recipe.
Karly says
@Maggie,
Yay! So glad you got to enjoy some cookies! ๐
I use a cookie scoop, so the dough comes out in little balls. I’m not sure if yours were squished more than mine going in the oven or not? Also, if you really want them puffy, try chilling the dough for 30 minutes or so. That really helps! And make sure your baking soda is out of date. ๐

Dude where’s all the GLUTEN??????
Just kidding gluten free people, bring on the g-free…if there’s sugar and peanut butter involved it can’t be bad!
Karly says
@shelly (cookies and cups),
I know. I seriously avoid gluten free recipes because it’s like they’re MISSING something. I don’t want to miss out on something delicious, you know?
But, yeah. I didn’t miss the flour at all in these!

DessertForTwo says
Oh, I know that type of husband. Along with only performing gentlemanly acts in public, he also commonly refers to you by your pet name in public too. Get it straight!
These cookies are making me hungry!
Karly says
@DessertForTwo,
Well, I have a bad habit of calling him Chaddy all over the internet and in public, so I’m not allowed to complain about pet names. Heh.
