Who ate enough turkey to pop the button on their jeans? Who tried every single pie at dinner? Who licked the bowl of mashed potatoes clean?
Oh, just me? Huh.
Hope y’all had a fabulous Thanksgiving. Mine was wonderful. Full of food and family and all that good stuff.
Then my husband and I immediately went and spent every single penny in our bank account on Christmas gifts. ‘Tis the season!
After all the hard shopping work we did, I made us some cookies. Not just any cookies, though. These cookies aren’t the least bit cakey or chewy. Gooey really is the best descriptor. Even though these are nothing like a traditional chocolate chip cookie, they still make as one of my top 3 favorite chocolate chip cookies.
These Chocolate Chip Gooey Butter Cookies are basically Gooey Butter Cake in cookie form with some chocolate chips tossed in.
Chocolate Chip Gooey Butter Cookies
Ingredients
- 1 box butter cake mix
- 8 ounces cream cheese room temperature
- 1/2 cup butter room temperature
- 1 large egg
- 1 teaspoon vanilla
- 1 cup milk chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Beat together the cream cheese and butter until well combined. Beat in the egg and vanilla. Add the cake mix and beat until well combined. Stir in the chocolate chips.
- Roll tablespoonfuls of dough into balls and place on a parchment lined baking sheet. Bake for 10 - 12 minutes or until the top is set, but the center is still gooey.
- Cool on a wire rack.

If you do this with white cake mix and rainbow sprinkles instead, you get really awesome Confetti Cookies (: and I have a feeling that lemon cake mix with white chocolate chips and cranberries would also be fantastic

These were a huge hit! My husband not a big cookie fan and ate nine of them! My two boys are hooked as well. Took me 5 minutes to throw it together, three ovens going and 12 minutes for warm cookies after dinner tonight.

Wow! Once, back in 1995, my bakery made 6000 ( I’m not lying) gooey butter cake squares for an event. Alas, The event went broke and the check they wrote me bounced. I haven’t eaten ooey gooey butter cake since. But. THIS recipe may be the one to bring me back!Thank you for sharing!

How many cookies does it make? This sounds great for the holidays, but I need to know how many batches to make to get the # I need. LOL

It’ll make around 2 dozen, depending on the size you make them. I used my 2 tablespoon cookie scoop for right around 2 dozen cookies.

Would a butter cake be the same as a yellow cake mix, or is there a separate butter cake mix? Thanks!

You can use a yellow cake mix, but they do make butter cake mixes. ๐ Either one would work fine, but I always opt for more butter. Haha!

Yummy!! I will definitely have to make this – too bad the grand-children and son-in-law are allergic to cheese so they don’t know what they are missing. Reading the above comments made me LOL…I am well-ahead of you all, living in Canada we celebrate Thanksgiving at the beginning of October so I already worked off the extra pounds and getting ‘fit’ for Christmas dinner. Yummy! Who needs a fancy dress, my elastized granny pants will work well, good excuse to sit on the floor with the grand-kids to play games.
