I’m a sandwich kind of gal and these buffalo chicken sliders are no exception.
Fully obsessed with the soft, squishy sweetness of the Hawaiian rolls paired with the saucy spiciness of the shredded chicken. Throw in the gooey cheese and the ranch butter (omg!) and you’ve got a winner.
Serve these up at the next big game, during your next get-together, or for a quick dinner that the teens in your life will go bonkers over.

Ingredient Notes:
Cooked Chicken – You’ll need some cooked and shredded or chopped chicken ready to go for this recipe. A rotisserie chicken is quick and easy, or try out my crockpot shredded chicken for freezing ahead of time!
Butter – This is used in the sauce and to make the ranch butter.
Frank’s Red Hot – My favorite hot sauce, and perfect for making buffalo sauce! You can use any brand you prefer if you have a different preference. This will get mixed up with the melted butter.
Dry Ranch Seasoning – Be sure to use the seasoning mix and not the dip mix or things will get salty.
Cheddar Cheese – We like to use slices of cheddar cheese on these sliders! You could use a different type of cheese if you have another preference.
King’s Hawaiian Rolls – The sweet bread goes well with the spicy buffalo sauce and savory chicken and ranch flavors.
Ranch Dressing – We like to serve these buffalo chicken sliders with some prepared ranch dressing! You can prepare your own or just use the bottled kind if you are in a hurry. Blue cheese works too if that’s your thing!

How To Make Buffalo Chicken Sliders:
Melt together the butter and hot sauce in a small sauce pan and whisk to combine.
Add the chicken to the buffalo sauce and sprinkle in a bit of ranch seasoning. Stir to coat.
Spread the chicken over the sliders and top it off with cheddar cheese slices.
Whisk together the melted butter and ranch seasoning and spoon that over the top buns.
Bake these until hot and browned, about 15 minutes. Serve warm while the cheese is still melty.
Swaps & Substitutes:
Cheese: We’re calling for sliced cheddar, but shredded cheddar, mozzarella, or crumbled blue cheese will also work great here.
Sauce: We always have butter and Frank’s on hand, so we use that to make a simple buffalo sauce. If you have a bottle of buffalo sauce in the fridge, feel free to substitute that. Use more or less sauce to taste, depending on your spice preferences.
Slider Rolls: I’m obsessed with the sweet Hawaiian rolls paired with the spicy chicken, but you can use any type of bun or bread here.
Serving Suggestions:
We like to serve these with individual dishes of ranch dressing (or blue cheese, if that’s your thing). We use these little dishes for sauces at dinner allllll the time. They come in so handy and the kids love them.
These sliders are fun to serve up at football games with other snack foods, like our lil smokies, Chex Mix, or pizza pinwheels.
For dinner, pair this with some raw celery and carrots to dip in that ranch. Easy peasy!
Buffalo Chicken Sliders
Ingredients
- 1/2 cup butter divided
- 1/2 cup Frank’s Red Hot more to taste
- 2 cups cooked, shredded or chopped chicken
- 3 tablespoons dry ranch seasoning divided
- 6 slices cheddar cheese
- 12 King’s Hawaiian Rolls
- prepared ranch dressing or blue cheese for serving
Instructions
- Preheat oven to 350 degrees.
- Add 1/4 cup of butter to a small sauce pan over medium heat and melt.
- Stir in the Frank's Red Hot to combine. Remove from the heat.
- Add the chicken to the pan along with 2 tablespoons of ranch seasoning. Stir to coat chicken.
- Use a bread knife to slice the rolls in half to form sandwich buns. Place the bottom half of the rolls in a 9×13 baking dish.
- Top each roll with the chicken mixture and a half of a slice of the cheddar cheese.
- Place the top halves of the rolls over the chicken.
- Melt the remaining 1/4 cup of butter over low heat. Stir in the remaining tablespoon of ranch seasoning until well combined. Spoon the mixture evenly over the tops of each roll.
- Bake uncovered for 15 minutes or until heated through and rolls are golden brown.
- Serve with prepared ranch dressing or blue cheese dressing for dipping.

I like the toastiness of the bread, but if you’re not a fan, just cover them with foil. They’ll stay much softer that way. ๐

I adore everything Buffalo Chicken, and really like this style of casserole sliders for parties. I grew up in Buffalo, and frequently crave that flavor profile now that I don’t live there. I would respectfully suggest though – a good chunky blue cheese dressing instead of ranch, for serving. It’s more authentic. No one in Buffalo would be caught dead serving ranch with wings – lol. ย If you’re going to buy it vs make – get the kind from the salad case, not the shelf stable dressings. Dry ranch in the mix and on the rolls, I don’t have a real problem with – but add some celery chunks and crumbles of blue cheese (instead or in addition to the cheddar). ๐

I agree, as a girl that grew up in Buffalo. I cooked the chicken in the slow cooker with Franks hot sauce. I made blue cheese dressing and spread it on the bottom side of the rolls. Then I made a mixture of shredded carrots and thinly sliced celery mixed with blue cheese dressing that I put in on top of the chicken. I topped with the rolls and the “ranch” butter and baked er the directions. Big hit!!!
