Barbecue Mac Grilled Cheese Sandwiches
Now, you can certainly serve this shredded beef on buns the traditional way, like you would pulled pork. But when you get tired of that? These grilled cheese sandwiches are here to save the day.

Serves 12 sandwiches
Ingredients
- 1 recipe shredded barbecue beef
- 1 recipe macaroni and cheese
- Sourdough bread
- Butter for spreading on the bread
- Cheddar cheese slices 3 per sandwich
Instructions
- Preheat a skillet over medium heat.
- Spread butter on one side of each slice of bread.
- Place one slice of bread, butter side down, in the skillet.
- Top with 1 slice of cheddar cheese, a large spoonful of the shredded beef, another slice of cheddar, a scoop of macaroni and cheese, a third slice of cheddar, and the second piece of bread.
- Cook until the bottom piece of bread is crispy and golden. Carefully use a spatula (and your fingers to hold the sandwich together!) to flip. Continue cooking until the bottom slice of bread is cripsy and golden.
- Repeat to make as many sandwiches as desired.
- Let sit 3 minutes before cutting and serving.

SHUT the front door. Mac and cheese AND pulled bbq beef (I bet this would be great for pork shoulder, too) on the same dang sandwich?? The only problem with this is that I would probably end up wearing it in trying to eat it. But the mess would totally be worth it. Holy cow.

At the Barclay Center in Brooklyn they serve mac & cheese with bbq brisket! Amazing!!!! Totally a reason to go to a basketball game, this sandwich looks like a great substitute!
