So, do you guys remember me telling you how I was in the midst of a diet competition with my husband? The winner gets a big fancy vacation?
Well. The competition ended on December 31 and I’m happy to announce that I kicked his trash. Hard.
How’d I do it? Oh, you know. Bacon. And cheese. And burgers.
I’ve been following a ketogenic diet, which basically means that I’m not eating carbs and I’m really sad and cry all day while baking cookies for my family. It’s pitiful, but man it works. I lost fourteen pounds over the month of December. Yes. I lost weight over Christmas. I win.
Anyway, I’ve been having fun coming up with some low carb recipes and I thought I’d share a favorite with you. This salad is good whether you eat carbs or not. Like, for serious good. The homemade low carb salad dressing is OUTRAGEOUS and I really want to dip french fries in it. *sigh*

Okay, friends, here’s the recipe! Hope you enjoy it as much as we do!
Bacon Cheeseburger Salad
Ingredients
For the salad:
- 1 1/2 - 2 cups mixed greens
- 1/4 cup cheddar cheese
- Dill pickle slices as desired
- 4 slices cooked and crumbled bacon
For the burger:
- 6 ounces ground beef
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
Dressing:
- 1/4 cup mayo
- 2 tablespoons mustard
- 2 teaspoons ketchup
- 2 teaspoons vinegar more to taste
- 1 teaspoon fresh chopped dill
Instructions
- Add the greens, cheese, pickles, and bacon to a large bowl. Toss to mix.
- Sprinkle the seasonings over the ground beef and shape into the form of a hamburger patty.
- Cook in a medium skillet over medium heat for 5 minutes per side or until cooked to your liking.
- Chop the burger into bite sized pieces and add to the salad.
- To make the dressing, add all ingredients to a small bowl and whisk to combine.
- Drizzle the dressing over the salad.

I love salads and cheeseburgers.. but I loathe mayonnaise. Do you have any suggestions to sub the mayo with? Or can I just leave it out?

You could use any dressing you like, but I wouldn’t leave the mayo out of this one or you’ll just have ketchup and mustard on your salad. This is very similar to Thousand Island, if that helps.

I just use plain white distilled vinegar, but whatever you like best is probably fine.

Try substituting sugar free sweet pickle juice for the vinegar…you will love it!!! I also do this in potato salad and deviled eggs!

Personally I love following a low carb diet. It keeps the L.B’s at bay and stabilizes my blood sugar. Because of this I am always on the lookout for low carb dishes (especially salads because I get these weird salad cravings. . .go figure). So this salad will most def be making it onto my menu (extra motivation that the husband is trying hard to look like Vin Diesel. . .and is swearing off carbs). But enough about this food chit chat. . .what I really want to know is details for your fancy schmancy vacation. Do tell!

Craving salad?!! Haha! Me too. I love it, I just like it best when someone else makes it for me. 😉
As for the vacation, I ended up negotiating a bunch of small trips instead of one big one. Ha. I travelled 11 times last year – totally worth it! 🙂 I do have a travel section on the blog, though I didn’t blog about all of the trips. 🙂

I’m a greedy woman and I’ve put on some pounds since Christmas because I keep on eating chocolate and cookies. Chocolate is my best friend (or my worst???).
I’m thinking about going on a slimming diet and I could have this salad as a whole, nourishing and healthy meal. I pin it!

Karyl – so I’m looking at info on the Keto diet, and do you really lose weight eating that amount of fat? I would love that ha ha– I am going to be looking for your low carb recipes on your blog!!! I think that would be awesome. You’ve inspired me. I just joined WW on Monday and not sure how that is working for me. I’m liking the keto idea (I looked on the web for info). Hi Donna!
You really can lose a lot of weight eating that much fat. You just have to be sure that your body goes into ketosis and it will burn the fat and your fat stores for energy instead of carbs. The fat also helps you feel full for longer and you’ll notice that you don’t eat as many calories…I might eat a ton of fat throughout the day, but I still somehow manage to stay between 1000-1500 calories pretty effortlessly. 🙂 As for starting a second blog, I have considered it, but honestly this one is already a 40 hour a week job, so I just haven’t made the commitment. It’s definitely on my mind though. 😉

Looks so yummy and making this tomorrow. I have a different problem than most and that is my husband wants to do low carb but I don’t! It just doesn’t seem creative enough I guess. Change my mind for me!! ha ha. What plan are you following?

Oh, there are so many ways to get creative with low carb!! The first couple of weeks, I ate a lot of the same easy things, but I’m starting to experiment more now and i’ts a lot of fun. 🙂
I’m doing a keto diet, so I keep my carbs under 20g a day and try to stay at 5% carbs, 20% protein, and 75% fat for the day. I seem to naturally fall within those numbers, so I only tracked it for the first few weeks. It’s really pretty easy once you’ve gotten the hang of it. 🙂

I ate a lot of egg salad, chicken salad, pepperoni, and cheese. We had pork chops or steak for dinner quite a bit with steamed broccoli and salad. I also ate a lot of taco salads. 🙂

Yum yum yum!! My husband raved about it and loved it even more when I said it was low carb. I wanted to tell him we would be eating more low carb but still not sure I can do it!! This is great recipe will be tried in this house hold we have been on a Keto/low carb diet to be honest mostly my husband needed it took some time changing him but this will be a great addition. Today we are having Stuffed Cabbage leaves with cauliflower, organic meat as our mix and a small amount rice as filler. Will add a simple salad early. Keep experimenting and I’ll be watching for new develops. Congrat’s on your weight change.

I am still mega impressed that you were able to do that over Christmas…me, I was face planting into every cookie and fudge plate within a 10 foot radius! Not pretty!! This week we have been hitting the gym hard, and I have tried so hard to limit my carbs. I’ve done good, but still had some. I am definitely adding this salad to our list though…yum!!!
