You guys know how much I am obsessed with Mexican food.

I mean, I’m sharing my Mexican-inspired recipes here pretty often and I regularly talk about how I could eat tacos for every meal of every day.

While I absolutely love a taco on a soft, chewy flour tortilla, there’s something about a freshly fried crispy corn tortilla that calls out to me.
