One Skillet Cajun and Rice Weeknight Recipe Winner!
We really love the flavors of Cajun cooking and put our favorite Cajun/Creole seasoning blend on dang near everything these days. (That’s Tony Chachere’s for those wondering!)
We, of course, also love easy recipes for busy nights (like our sheet pan sausage and veggies) and this is a one skillet recipe where the sausage, veggies, and rice all cook together. Easy prep, easy cooking, easy clean up! Busy mom approved.
Since my family loves our creamy chicken and rice skillet recipe so much, we thought we’d do one with bigger, bolder, spicier flavors.
This recipe is spicy…I give it a 7 out of 10, but also I’m a little bit of a wimp. That said, there are notes in the blog post and the recipe card for reducing the heat to make it a little more kid (or wimpy mom) friendly.
This is perfect just as is, but it’s also great with a side salad or some of our dutch oven bread.

Flavor: The andouille sausage is packed with flavor that’ll get soaked up by the peppers, onions, tomatoes, and rice! It’s a hearty combination that is spicy and savory and perfect for weeknight dinners.
Easy: We love one pot dinner recipes that are simple to prepare. That’s what you get with this dish! The sausage, peppers, and rice all cook in the same skillet so you don’t need to make a big mess.
Versatile: Swap out the andouille sausage for smoked sausage or chicken sausage, switch up the seasonings (an Italian blend would be great!), and add in some cheese…a totally different recipe so you’re never getting sick of eating the same thing twice.
Ingredient Notes:
Andouille Sausage – This spicy sausage is a prime ingredient in Cajun cooking! An easy way to cut the heat of this dish is to use smoked sausage or polish sausage instead.
Peppers & Onions – I’m using red and green bell peppers but you can use any color.
Butter & Olive Oil – For sauteing the sausage, peppers, and onion.
Diced Tomatoes – I’m keeping this simple and using canned diced tomatoes. No need to drain!
White Rice – Be sure to use uncooked long grain white rice. Minute or instant rice will not work well in this recipe.
Chicken Broth – This is the moisture needed for cooking the rice and it’s going to soak up all that flavor so make sure that you use a good quality chicken broth to get the best results!
Seasoning – We use Tony Chachere’s or Slap Ya Mama seasoning, plus garlic powder, onion powder, and cracked pepper. There is lots of salt in the Cajun seasoning so we don’t usually add extra. You can add to taste after cooking!

Step by Step Instructions:
Sauté the sausage in some oil and butter. We like it to be nice and browned on both sides for maximum flavor.
Add the peppers, onions, and garlic to the skillet and cook those for about 5 minutes to soften up.
Add the remaining ingredients and bring to a boil, cover the pan tightly, and simmer for 20 minutes or until the liquid has evaporated.
Let it sit for 5 minutes after removing from heat. Fluff the rice with a fork and stir to combine. Serve it hot!
My Favorite Skillet!
Cast iron skillets are my favorite! They heat so evenly, get piping hot for searing, and nothing is better than bacon fried in a cast iron skillet.
Helpful Tip!
Storage & Freezing:
You can keep any leftovers stored in your refrigerator in an airtight container for about 3 to 4 days.
It can be reheated in the microwave or on the stove though you may need to add a bit of moisture if the rice has dried out.
You can freeze this recipe for up to a few months. Thaw overnight in the fridge before reheating in the microwave or on the stove.

Cajun Sausage and Rice Skillet
Ingredients
- 14 ounces andouille sausage
- 1 medium yellow onion
- 1 green bell pepper
- 1 red bell pepper
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 tablespoon butter
- 15 ounces canned diced tomatoes
- 1 cup long grain white rice
- 1 ½ cups chicken broth
- 2 teaspoons cajun seasoning see notes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cracked pepper
Instructions
- Slice the sausage into thin rounds. Dice the onion and bell peppers and mince the garlic.
- Add the oil and butter to a 12 inch skillet over medium heat. Once hot, add the sausage and cook until browned, stirring occasionally, about 4 minutes.
- Add the onion and peppers to the skillet and continue cooking, stirring occasionally, for 4-5 minutes until vegetables begin to soften.
- Add the garlic to the skillet and cook until fragrant, about 1 minute.
- Add the canned tomatoes (do not drain), rice, chicken broth, cajun seasoning, garlic powder, onion powder, and pepper to the skillet and stir to combine.
- Bring to a boil, cover the pan with a tight fitting lid, and simmer for 20 minutes or until the liquid has evaporated and the rice is tender.
- Remove from the heat and let sit covered for 5 minutes.
- Remove the lid and fluff the rice with a fork and stir to combine. Taste and add additional cajun seasoning or salt, if desired.

Fixed last night and followed directions exactly. Rice wasn’t near done. Added 1 to 2 more cups of chicken broth and simmered till broth absorbed. Still not done. Tasted okay if rice had cooked. From now on I will. Fix rice separately and add in

Hi Susie! Did you use long grain white rice as instructed? Brown rice takes a lot longer to cook, but white rice should easily be done in 20 minutes with the amount of liquid in this recipe. We make this recipe (and other versions like it with these same ratios) regularly, so I’m not sure what the issue would be.
