Breakfast sliders are loaded with bacon, ham, egg, and white cheddar on a roll that’s been slathered in maple butter and baked to perfection! The perfect addition to breakfast or brunch!
Would you like to save this?
I’ve pretty much decided that dinner parties are out and brunch is the only way to go.
My friends and family, a pile of bacon, a couple of mimosas, and maybe a stack of chocolate glazed donuts or homemade biscuits to round things out.
Oh, and breakfast sliders, obviously!
These little sliders are filled with scrambled eggs and bacon, topped with white cheddar, and then the rolls are brushed with maple butter. If that isn’t the perfect breakfast combo, I’m just not sure what is.
These are savory and rich thanks to the bacon and sharp, melty cheddar with the perfect pop of sweetness from the maple butter. Definitely an irresistible combo and easy for feeding a crowd.
Want something sweet to go with these? Monkey bread muffins are always a hit.
Ingredient Notes:
Breakfast Meat – I’m using some deli ham and cooked, crumbled bacon for the breakfast sliders. Try out this easy air fried bacon recipe, it saves on time and makes for much easier cleanup! Breakfast sausage would also be tasty!
Cheese – We went with a sharp white cheddar, but any cheese you like – sliced or shredded – will be tasty. Use pepperjack for a little kick.
Eggs – We combine whisked eggs with milk and scramble them up.
Rolls – This is the perfect recipe to use up leftover dinner rolls. Hawaiian rolls would work as well, but keep in mind that we’re also brushing maple butter over the top.
Maple Syrup – You’ll want to use real maple syrup (not pancake syrup) for the best flavor. We’ll be mixing it with melted butter and drizzling it over the rolls.
What We Love About This Recipe!
These are perfect for breakfast and brunch, but they make a great brinner too! The maple syrup adds the perfect pop of sweetness paired with the salty bacon and scrambled eggs.
How to Make Breakfast Sliders:
Eggs: Whisk together eggs, milk, and salt and then scramble the eggs. They should still be a bit wet when done, as they’ll finish cooking in the oven. Don’t overcook your eggs in this step.
Assemble: Cut the rolls in half and start topping them first with the deli ham, then the eggs, cheese, and finally the crumbled bacon! To finish assembling the breakfast sliders top them off with the other half of the roll.
Maple Butter: Stir together melted butter and maple syrup and then brush or drizzle that mixture over the tops of the rolls.
Bake: All that’s left now is to bake these breakfast sliders for 15-20 minutes or until the cheese is good and melted and everything is warmed through.
Helpful Tip!
Spice it Up!
- Add diced green chiles to the scrambled eggs for a little kick.
- Use sliced pepper jack cheese in place of the white cheddar.
- Add a pinch of cayenne to the maple butter.
FAQs:
Sliders are small sandwiches, often burgers, that are an American staple. You can turn just about anything into a slider by using a small sandwich bun or dinner roll to assemble the sandwich.
While you could probably get away with using pancake syrup, pure maple syrup is going to give you the best flavor. We like Grade A Dark Color syrup as it has a more robust maple flavor.
The sliders should hold up pretty well in the refrigerator for at least a couple of days if you keep them well wrapped or sealed. They are best reheated in the oven!

Breakfast Sliders
Ingredients
- 8 large eggs
- 3 tablespoons milk
- 1 teaspoon salt
- 8 tablespoons butter divided
- 6 slices deli ham
- 6 slices white cheddar cheese
- 6 slices bacon fried and coarsely crumbled
- 12 dinner or Hawaiian rolls see note
- 3 tablespoons pure maple syrup
Instructions
- Preheat oven to 350 degrees.
- Add eggs, milk, and salt to a mixing bowl and whisk well to combine.
- Heat a medium skillet over medium heat and add 2 tablespoons of butter. Once butter has melted, add the eggs and cook until just set. Eggs should still be a bit wet as they’ll be going in the oven. Do not overcook.
- Slice the rolls in half and place the bottom halves in a 9×13 baking dish.
- Top the rolls with the deli ham, scrambled eggs, white cheddar, and crumbled bacon. Place the tops of the rolls over the bacon.
- Melt the remaining 6 tablespoons of butter in a small bowl and whisk in the maple syrup to combine. Drizzle the maple butter liberally over the rolls letting it run down the edges and soak the buns. It may seem like too much butter, but use it all as it will soak into the rolls.
- Bake for 15-20 minutes to heat through and melt the cheese.
- Serve hot.
Gina says
Do I need to cover them before I place in the oven?
Karly says
If you want the rolls more steamy and soft, cover the pan. If you want them more toasted, you can leave it uncovered. ๐
