I mean, mine mostly consists of rushing the kids to eat, shower, and get ready for school. Of course, we homeschool, so getting ready basically just involves mentally preparing ourselves to argue about the importance of math and history all day. Because, phones have calculators now and Google exists for a reason. Math and history are no longer something one needs to learn, apparently.
Anyway. Mornings are probably easier on me than they are on the people who are rushing kids out the door to school and trying to get themselves to work at the same time.
That’s why I teamed up with Hungry Jack® to bring you guys a recipe that the whole family can enjoy together. Everyone loves a good pancake and they really are perfect for enjoying together around the breakfast table – except for mom or dad, who is stuck flipping the last of the batch.
I created these pancake muffins as a way to get everyone to the table at the same time to enjoy a little calm togetherness together before their busy days. You’re going to love how easy this recipe is, too!
I started with a box of Hungry Jack® Buttermilk pancake and waffle mix, stirred in some chopped up sausage links, and a spoonful of syrup for sweetness. Everything gets dumped right into a muffin tin and baked.
We all drizzled our muffins with extra syrup, because duh.
This was such an easy and fun way to get breakfast on the table and the kids loved helping me mix up the batter. Next time, though, they’re requesting we mix things up with some chocolate chips. Can’t say that I think that’s a terrible idea.

Pigs In A Blanket Pancake Muffins
Ingredients
- 1 cup Hungry Jack® Buttermilk pancake and waffle mix
- 2/3 cup milk
- 2 eggs
- 1 tablespoon oil
- 1 tablespoon Hungry Jack® Original Syrup
- 4 sausage links cooked
Instructions
- Preheat oven to 350 degrees.
- Add the pancake mix, milk, eggs, oil, and syrup to a medium mixing bowl and whisk to combine.
- Chop the sausage links into small pieces and stir into the batter.
- Pour batter 2/3 full into a greased or lined muffin tin.
- Bake for 13 minutes or until a toothpick inserted comes out clean.
- Serve with extra syrup, as desired.

I bought my pancake mix and sausage links today. I’m going to try them this weekend! I also bought some chocolate chip pancake mix to try out in the recipe too!
