I was starting to think that I was out of new recipes for the holidays and then it was like a flip switched. I have allllll the ideas, but not enough time to share them.
I’ve been trying to prioritize and be realistic about what recipes I have to share over the next couple of weeks and what recipes can wait. My job is so hard sometimes. 😉
Anyway, the minute I popped one of these tender little sweet potatoes into my mouth, I knew they were moving to the top of the list of recipes that had to be shared this fall. There is no way they could wait another minute, friends.
You’re going to love how simple these are to make. Even my non-sweet-potato-lovers enjoyed this recipe. I think it has something to do with the maple and the bacon. I mean, duh.
These are similar to my super popular roasted sweet potatoes with honey and cinnamon. Serve them for Thanksgiving alongside my green bean casserole with bacon.
I just peeled and diced a few sweet potatoes, tossed them in a mixture of olive oil and maple syrup, and roasted them until they were tender. It takes about 20 minutes for them to be perfectly roasted, which means these are an excellent side for any night of the week.
After I pulled them from the oven I sprinkled on some crispy, diced bacon.
I have to tell you, I really debated using olive oil in this recipe. I wanted to use the bacon drippings in place of the oil and you totally can do that if you want. It’s only going to make these taste even better. I’ve been on a mission to make healthier changes where I can though, so I went for the olive oil.
Be sure to sprinkle on plenty of salt and pepper before serving. The saltiness mixed with the maple is my favorite part. Or maybe the bacon is my favorite part? Oh, no, actually it’s the tender sweet potatoes.
Serve alongside some roasted chicken and steamed veggies for an easy but still totally impressive family dinner.
Give these a try and see if you can convince your sweet potato haters to love these. I got lucky – maybe you will too!

Maple Bacon Sweet Potatoes
Ingredients
- 3 large sweet potatoes
- 2 tablespoons pure maple syrup
- 1 tablespoon olive oil
- 3 slices bacon fried and chopped
- 1 teaspoon dried parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 425 degrees.
- Peel and wash the potatoes and dice into bite sized pieces. Place potatoes on a foil lined baking sheet.
- Add the maple syrup and olive oil to a small bowl and whisk to combine. Pour mixture over the potatoes and toss to coat.
- Place in oven and bake for 20 minutes, stirring halfway through.
- Remove from oven and sprinkle with bacon, parsley, salt, and pepper.

Oh my goodness, these are the prettiest sweet potatoes! I kinda wanna eat them straight from the pan… looks so damn good!
I also thought I forgot how to cook holidays-stuff and now, only a week and some away from T-Day, and I can’t stop the deliciousness in my head. :-/
