Once upon a time there was a little girl who was home for the week with her mama while her dad and brother were off on a boy’s fishing trip.
The little girl thought this to be terribly unfair. Her daddy offered to bring her on the fishing trip, but of course, she didn’t want to fish. That’s boring. She wanted to go to the beach. And go shopping at American Girl. And spend an entire day doing nothing but baking desserts.
Her mama vetoed American Girl, because no. Her mama is no fool.
The lucky little girl was granted a day at Lake Michigan and a day in the kitchen baking up all kinds of ridiculous things.
Around dinner time the little girl couldn’t remember what she’d had for lunch, so she asked her mother. Her mama explained to her that she had eaten monster cookies and cake batter blondies and pumpkin cake for lunch. The little girl declared it the best day ever.
The end!
So, that’s the story of how these cake batter blondies came to be! They make a great lunch, but I’m going to be a responsible adult and insist that you make them for dessert.
These are super easy – no mixer required! One bowl, a wooden spoon, and a baking dish is about all you’ll need.
As you know, because I’ve mentioned it approximately one million times, we recently moved into a new home. The kitchen appliances were all pretty sad and outdated, so I shopped around a bit and fell in love with the line of GE Profile appliances. And then I emailed GE and said, hey! So, now we’re BFFs and that’s the story of how I came to have a kitchen full of fabulous appliances that I paid for with baked goods. #livingthedream
Take my GE Profile range, for example. That 20,000 BTU tri-ring burner is basically my favorite thing in the entire world. Water boils so quickly that I can hardly even deal.
The double ovens are pretty rad, too. That day that the girl and I spent baking went so smooth, because we were using both the top and bottom oven. Both cook evenly and they really make busy cooking days a dream. The bottom oven has a roller rack that you can slide in and out as needed.
It’s a breeze to clean, too. The large cast iron grates pop right off and slide back into place easily. The knobs are also easy to pop on and off for cleaning.
This is the exact range that I have and I’m very happy with it.
Now, back to the blondies! These have that cake batter flavor that everyone goes nuts for. And, of course, sprinkles! No way was my daughter going to make a dessert that didn’t contain sprinkles. They’re her favorite flavor, after all. You’ll love how chewy these bars are, too!
Cake Batter Blondies
Ingredients
- 1/2 cup butter melted
- 3/4 cup brown sugar
- 1 large egg beaten
- 2 teaspoons vanilla
- 3/4 cup dry yellow cake mix
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/2 cup sprinkles
Instructions
- Preheat oven to 350 degrees. Line a 8x8 baking dish with parchment paper.
- In a medium bowl, stir together the melted butter and brown sugar until well combined.
- Stir in the egg and vanilla.
- Stir in the cake mix, flour, salt, and sprinkles until well combined. Batter will be fairly sticky.
- Spread into the prepared baking dish and bake for 20 minutes or until tester comes out mostly clean.
- Cool before cutting and serving.

I LIVE to someday have a double oven. JEALOUS. But that’s far in the future, for when I own my own apartment. By then, they’re probably have invented quadruple ovens.
And anything cake batter sounds good to me! Especially for lunch. ๐
