Well, hi. It’s Monday. Again.
But, yesterday was Sunday and also Easter and that meant that I ate candy for breakfast, so I guess I won’t complain.
What? You didn’t think that the kids were the only ones shoving chocolate peanut butter eggs in their faces before 8am, did you? Cuz, nope.
We then went for a nice lunch with family and an Easter Egg Hunt Death Match where the kids fought to the death over plastic eggs filled with cash money.
But, then? Then my husband and I took the kids to the movie theater and declared it a popcorn for dinner kind of night. Those are the best.
It just so happens that the recipe I’m sharing today is a popcorn recipe, so that story ties in seamlessly. I love when that happens.
My friend and blogger, Ashton, sent me a copy of her fabulous cookbook, Party Popcorn, way back when and I’ve basically been eating my way through the entire thing.
Her book has 75 recipes for popcorn. Yes. I said 75. That’s a lot of popcorn and the recipes are every bit as fantastic as the goodies you find on her blog day in and day out! I think her and I are long lost twins, because she seriously makes desserts that I have dreams about.
There are both sweet and salty treats in her book, which I love. Sweet Jalapeno Barbecue Popcorn, Taco Lime Popcorn, and Bacon Teriyaki Popcorn are a few of my savory favorites. Chocolate Covered Strawberry Popcorn, Pecan Praline Popcorn, and Gooey S’mores Popcorn are a few of my favorite sweet recipes. Since I’m currently pretty addicted to recipes that are both super simple and super flavorful, I decided to share her Doritos Popcorn recipe with you! She calls for Nacho Cheese Doritos, but you could definitely use any flavor of Doritos chips that you prefer. I’ve made this with both Nacho Cheese and Cool Ranch and both are fantastic! And my word, I love that instead of trying to add a ton of special seasonings to the popcorn to try to recreate the flavor, she just has you blitz some chips in the food processor and coat your popcorn with the crumbs. It’s seriously genius.
Nacho Cheese Doritos Popcorn
Ingredients
- 8 cups popped popcorn
- 1/2 cup Nacho Cheese Doritos
- 1/2 teaspoon salt
- 4 tablespoons butter melted
Instructions
- Pour the popcorn into a large bowl and remove any unpopped kernels.
- Process the Doritos and salt in a food processor or blender until the Doritos become fine crumbs.
- Drizzle the butter over the popcorn. Sprinkle wit the Doritos crumbs and gently toss to coat. Serve immediately.
