So, you guys, I have a story.
My daughter, you see, is kind of nuts. She’s ten years old and she’s sassy and entertaining and a little bit strange and I love the heck out of her.
The other night she had a friend over for the night and they kept taking walks around the neighborhood. At first, it was just a way to entertain the dog, but it quickly turned into drama, as things tend to do when 10 year old girls are involved.
You see, there was an older couple walking around our block, too. And they passed the girls twice. Which obviously meant that the older couple was stalking them.
I mean, that’s how it works right?
So, rather than behave like normal humans who think they’re being stalked (for example, locking your doors and calling the police), my daughter grabbed a long trail of toilet paper and arranged it so that it was hanging out of the back of her shorts.
She was basically trying to be so disgusting that no one would want to kidnap her.
That’s some next level self defense right there, if you ask me.
And it must have worked, because she made it back home safe and sound, with a strip of toilet paper flapping in the wind behind her.
Anyway, that really has nothing to do with anything. I just had to get that story off my chest. It needed to be told.
I went ahead and made one of my favorite sandwiches in all of the land for you guys. It’s full of my favorite pimento cheese recipe. And then, because I’m nuts, I also add some perfectly crispy and crunchy fried green tomatoes.
This sandwich is rich and cheesy and just bursting with flavor. You’re going to love it! And you may just talk with a Southern accent when you’re done devouring it. But, that’s just a guess. 😉
Fried Green Tomato and Pimento Cheese Sandwiches
Ingredients
- 2 slices sandwich bread
- 2 tablespoons butter
- 1/4 cup pimento cheese
- 1 fried green tomato
Instructions
- Heat a large skillet over medium heat until hot. Spray with non-stick cooking spray.
- Butter one side of each slice of bread.
- Place one slice of bread, butter side down, in the hot pan. Top with 1/2 of the pimento cheese. Add one fried green tomato and top with the remaining pimento cheese. Place the second slice of bread on top, with the butter facing up.
- Cook until the bottom is golden brown and flip. Continue cooking until the bottom is golden and the cheese has melted.
- Serve hot.

Seriously, these fried green tomatoes take me back to my childhood. That melty pimento cheese just takes this sandwich to a whole other universe! I want one now Karly! Pinning for later! Yum!

You kind of left me speechless with the toilet paper story/stalking story. I’m a gym teacher and my house just got egged. Do you think if I did the toilet paper trick at school they would leave my house alone? Anyhow, great sandwich. Makes me want to watch that movie with Kathy Bates…I think it is called Fried Green Tomatoes as it’s raining here.
