These maple glazed carrots are roasted in the oven and sprinkled with a bit of cayenne for an unexpected spicy kick!

How do you feel about sweet and spicy? Are you a fan? I love a little sweet with my spice. Maybe because I’m a wimp or maybe just because I’m awesome. Probably the second one.
Normally I’m pretty traditional when it comes to carrots. Roasted carrots, steamed carrots, carrots glazed with butter and cinnamon. I don’t usually add any other major flavors to carrots, because they’re pretty perfect on their own.
But, every now and then, I go a little crazy in the kitchen. This time around I sprinkled some cayenne pepper into my maple syrup glaze and then I coated my carrots in the glaze.
Speaking of the maple glaze, please use real maple syrup. This stuff right here is what I usually buy. It’s a big jug and it’s pretty dang delicious.
Sweet, spicy, and totally unexpected. These were really good! If you liked my honey cinnamon roasted sweet potatoes, you will love these! (Those sweet potatoes are going nuts on Pinterest…pin them yourself to save for later!)
I don’t know about you, but two of us can plow through a pound of carrots pretty quickly once they’ve been roasted. So earthy and delicious! I’d recommend doubling or tripling this recipe as needed.
If you’re more of a traditionalist when it comes to your veggies, skip the cayenne. These are delicious even without it and your house will smell so good while the carrots are cooking away in a hot oven.
Serve these with my turkey meatloaf for a fabulous weeknight dinner! Or alongside my green bean casserole with bacon for a delicious holiday dinner!
Updated to add, that holy cow! I’m not the only sweet and spicy carrot lover! My gal pals (ew, I’ll never use that term again, promise) over at Garnish With Lemon shared almost this exact same recipe earlier this year. I knew those girls were my soul mates.
Spicy Maple Roasted Carrots
Ingredients
- 1 pound carrots
- 1 tablespoon olive oil
- 1 tablespoon real maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
Instructions
- Preheat oven to 400 degrees.
- Wash and peel the carrots. Slice into equal sized sticks.
- Add carrots to a bowl and add the remaining ingredients. Toss well to coat the carrots evenly.
- Spread on a baking sheet and cook for 20 minutes. Serve hot.

These were incredible! ย After I cut up the carrots, I went to the pantry to get the other ingredients and discovered that both bottles of my pure maple syrup were gone! ย My son has been eating more waffles than I realized! ย Fortunately, I had a new bottle of honey, and so I used that in place of the maple syrup. ย It was great, but next time Iโll make sure I have maple syrup. ย I really love these and cannot believe we gobbled up a pound of carrots so fast. ย Iโm looking forward to making them again soon.
