This easy lo mein recipe is packed full of bacon for a fun twist on a classic Chinese dish. My whole family gobbles up this lo mein recipe.
I have a bit of a problem.
I’m trying really hard to limit the amount of dining out we do around here, both for our budget and for our health.
he problem, though, is my local Asian joint.
It’s so good and we’re all pretty addicted to it. When the kids ask to stop by there for lunch, how am I supposed to say no? Impossible.
So, I’ve been recreating a few of the recipes that I love from there at home. One of them is my bacon fried rice. You guys, it’s ridiculously good. I make it about once a week for lunch.
The husband makes a version of this himself, but his version involves adding about a stick of butter and a cup of Yum Yum sauce (much cheaper at Walmart than on Amazon, but that’s an affiliate link just in case you prefer to purchase online) to make it more like hibachi rice. So stinkin’ good!
He cooks the rice while I fry up our favorite sausage egg rolls. It’s quickly becoming a Sunday night tradition around here. We also make my pork stir fry quite a bit.
Anyway, the other day I was out of rice and I was really craving my Chinese fix. I didn’t want to get take-out, so I decided to revamp my fried rice recipe and make this easy lo mein recipe instead. With bacon. Because bacon. Did I mention the bacon? I wouldn’t want you to forget about the bacon.
How to make lo mein:
This lo mein recipe is super easy and comes together really quickly. I do like to get everything out and ready so that I can just toss it into the pan as I go. Things happen pretty fast when it comes to this type of cooking.
Start by boiling up some noodles. I’m using fettucine, which isn’t terribly traditional, but they are easy to find and simple enough for me.
While your pasta boils, fry up some diced bacon. Add in your onion and let it cook until it’s beginning to soften.
Add the peas and carrots and cook for a couple more minutes.
Push everything off to the side of the pan and crack in a couple of eggs and start scrambling.
Once the eggs are cooked through, stir everything back together, add in the drained pasta, and top with the homemade lo mein sauce.
Stir well and cook for 2 more minutes.
Serve with green onions on top and some soy sauce or chili paste, as desired.
I use my wok (affiliate link) for this, but a large skillet works well, too.
Bacon Lo Mein
Ingredients
- 12 ounces fettuccine noodles
- 3 tablespoons soy sauce
- 2 teaspoons honey
- 2 teaspoons chili paste
- 1 clove garlic minced
- 1/2 teaspoon dried ginger
- 1 pound bacon
- 1/2 sweet onion
- 8 ounces frozen peas and carrots
- 2 large eggs
- 1/4 cup chopped green onions
Instructions
- Add the fettucine to a large pot of boiling water and cook until al dente. Drain.
- Prepare the sauce by mixing together the soy sauce, honey, chili paste, garlic, and ginger. Set aside.
- While fettucine is cooking, dice the bacon and onion.
- Cook the bacon over medium high heat until cooked through, but not crisp. Drain the grease, leaving 2 tablespoons behind in the pan.
- Return the pan to heat and add the onion to the bacon and cook for 2 minutes, stirring often.
- Stir in the peas and carrots and cook for 2 more minutes, stirring often.
- Push the bacon and vegetables to the side of the pan and crack the eggs in. Stir constantly to scramble the eggs.
- When eggs are cooked through, stir everything together.
- Add the cooked fettucine to the pan. Pour sauce over the top and continue cooking for 2 minutes, stirring constantly.
- Sprinkle with green onions and serve immediately.

We have the same problem here – we have a deadly good chinese place and it’s a lot easier to justify picking up food for only two of us and sometimes three when my daughter is home. I’m not enjoying cooking at this stage of my life anymore but takeout is just too pricy. Maybe we can enjoy this chinese takeout substitute and save some cash. I could leave the onions out – how did you get your kids to eat onions, or do they pick them out?

You can definitely leave the onions out – I have to do that when my husband is eating with us. Haha! My teenager doesn’t mind them when they’re cooked and not too large, but my younger one picks them out. I think they just eventually start eating them as they get older. But, then again, my husband still won’t. So…no idea. ๐
