These s’mores cookies are chock full of crushed graham crackers, marshmallows, and lots of melty chocolate!
You guys knew this was coming? My graham cracker cookies were such a huuuuuuge hit that I had to put a little s’mores spin on them, because who can resist a s’mores?
Not me! (Speaking of s’mores, did you guys check out all the deets on our family’s favorite activity – Saturday Night S’mores Party?)
So! Back to the cookies! These are amazeballs. <— Are people still saying that word? Am I so 1999?
Imagine a soft and chewy cookie dough that is literally bursting with graham cracker crumbs. Then imagine stirring in a boatload of big fat chocolate chips. Aaaaaand, then picture yourself stirring in some of these marshmallow bits. You probably don’t want to use the mini marshmallows you’d find in a bag, because they’ll melt and get lost in the dough. Or worse, they’ll ooze out all over your pan. The little marshmallow bits are perfect for baking or for stirring in your hot chocolate. Or for dumping straight in your face.
S'mores Cookies
Ingredients
- 1/2 cup butter, room temperature 1 stick
- 1 cup brown sugar
- 2 teaspoons vanilla
- 1 large egg
- 1 1/2 cups graham cracker crumbs
- 3/4 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips
- 1 cup marshmallow bits
Instructions
- Preheat oven to 350 degres.
- In the bowl of a stand mixer, cream together the butter and sugar until creamy.
- Beat in the vanilla and egg until well combined.
- In a medium bowl, combine the graham cracker crumbs, flour, baking soda, and salt. Gradually add to the butter mixture until just combined.
- Stir in the chocolate chips and marshmallow bits.
- Using a medium cookie scoop, drop balls of dough onto a parchment lined baking sheet. Bake for 7 minutes.
- Cookies will look slightly underdone, but should set up nicely as they cool.

These are SO good. I’ve tried other recipes, but they had too much flour and too little graham. I actually couldn’t get my hands on any of the bits, so I spent a minute (or 20) cutting up mini marshmallows into 4ths and dehydrating them !!
Made the cookies that night. Wow! These were perfect. I’ve written this recipe down. Maybe after the holidays I can get some of the bits.

Where do you purchase marshmallow bits? I have been baking for many, many years and I have never seen or heard of them before.

You should be able to find them near the regular marshmallows. Jet Puffed makes them in a shaker can.

Umm… My son’s Boy Scout troop LOVES these little suckers. I had to morph them slightly as I only had chocolate marshmallow bits…. I’ll just say SNARF ! ๐
I was voluntold to enter these into a Scoutmaster cook off at the Summer Camp I was chaperoning.
Soooo many people asked me for the recipe- even as I was walking back to my tent. Had to tell them all that I don’t carry a copier in my gear. I make cookies all the time, and my son said I definitely need to add these to ‘THE BOOK’

I had problems with the brown sugar causing leakage during cooking and crusty ends hard to scrape off parchment. They didn’t stay firm enough as I’d like so consider adding baking powder or more flour for a more structured cookie (does that sound right, baking experts?) Also, added 2 mins to baking time. Otherwise, they taste AH-MAZ-ING! Great ratios of ingredients.

I’m going to make these for our office cookie swap. Do you think I’llbe able to swap whole wheat flour to make them appear to be healthy without losing any of the flavor?

If I were going to add whole wheat flour, I’d do a mix of half whole wheat and half white so they don’t dry out too much.

Freezing the dough should be fine! Baked cookies will stay soft in a sealed container for four or five days. ๐
